Homemade ginger ale with yeast

What's good about the homemade version of ginger ale is you reap the health benefits of real ginger. But, if you don't have soda water or a fancy machine to carbonate your water, then good ol' yeast will do. It just takes more time and patience.

Here's the list of ingredients that we'll be needing:

  • 2 tbsp grated fresh ginger roots (you can just chop the ginger into small pieces if you don't have a grater or a food processor)
  • 2 cups water
  • 1 cup granulated sugar
  • another 4 cups of water
  • 1/4 tsp yeast
  • 1 lemon

Step 1. In a saucepan, add 2 tbsp grated or chopped ginger in  2 cups water, then boil for about 15 to 30 minutes.

Step 2. Add 1 cup granulated sugar into the saucepan and stir until completely dissolved.

Step 3. Cool to room temperature and strain to remove garlic peices.

Step 4. Fill a 2 liter plastic bottle with 4 cups water. Next, pour the ginger sugar mixture in and add 1/4 tsp yeast and lemon juice.

Step 5. Before you cover the lid, make sure to squeeze out excess air from the plastic bottle by compressing it. This will allow the content to expand as yeast will eat the sugar to produce carbon dioxide. Thus, a carbonated ginger drink.

Step 6. This is the longest step that will take you roughly 48 hours, although, this is the part where you just wait. What you do is basically store the bottled ginger mixture for 48 hours.

Step 7. After 2 days, you can now refrigerate the ginger ale and serve once chilled.
